Alpha-lactalbumin is the regulatory subunit of lactose synthase, changing the substrate specificity of galactosyltransferase from N-acetylglucosamine to glucose. Structure is a multi-domain, mixed alpha and beta fold, containing four conserved disulfide bonds.
